Among all varieties of cabbage, the most popular in Russian cuisine is white cabbage. Hearty, inexpensive, mouth-watering, and easiest to prepare. When buying it, you should choose heads of cabbage without black and yellow spots. The leaves should not be loose, and at the same time strongly compressed. Do not use the cabbage stump in food, nitrates accumulate in it.

Preparing cabbage for stewing
The top tough leaves are removed from fresh cabbage. After the head of cabbage is washed, it is divided in half, again in half and the stump is removed. Then the cabbage is chopped into cubes or strips.
If sauerkraut is used, it is sorted out and large pieces are finely chopped. Sauerkraut is rinsed with water, but a significant amount of vitamin C is lost. Therefore, it is advisable to use its appropriate acidity to avoid soaking. You can balance the acidity of cabbage with sugar.

Ingredients:
- White cabbage - half a head of cabbage
- Apples - 1-2 pcs. (depending on size)
- Carrots - 1 pc. (big size)
- Garlic - 1 clove
- Tomato paste - 2 tablespoons
- Allspice peas - 4 pcs.
- Bay leaf - 4 pcs.
- Salt to taste
- Ground black pepper - to taste
- Refined vegetable oil - for frying
Cooking stewed cabbage with apples
1. With cabbage, carry out all the manipulations described above. To speed up the cooking process, you can chop the cabbage with a food processor.
2. Pour refined vegetable oil into the pan. Heat it up and send the cabbage to fry.
3. Grate the apple and carrots on a coarse grater. Again, you can use a food processor. Peel the carrots first, and remove the core with seeds from the apple.
4. When the cabbage is a little fried, add the carrot and apple to it.
5. Simmer the food for about 10 minutes and add the tomato paste.
6. Stir the food well.
7. Peel and chop the garlic.
8. Add garlic, bay leaf, peppercorns to the cabbage. Season it with salt and black pepper. Pour in some water, cover the pan and simmer over low heat for about 30 minutes. Ready cabbage can be served as an independent dish, or as a side dish to a piece of meat or fish. In addition, this cabbage can be used for filling pies, dumplings, pancakes, etc.
