Cooking kidneys is a special activity that takes a lot of time. But the result is very tasty. In addition, the offal is prepared along with apples, which give the dish a kind of sweet and sour note. Ingredients:
- Kidneys - 2 pcs. (the variety can be any, but pork is used in this recipe)
- Apple - 1 pc.
- Garlic - 2 cloves
- Soy sauce - 2 tablespoons
- Mustard - 1/3 tsp
- Salt - 0.5 tsp or to taste
- Ground black pepper - a pinch
- Vegetable oil - for frying
- Any spices and herbs to taste
Step by step cooking of stewed kidneys with apples:
1. Preparation of the kidneys must be started with soaking in cold water. So put them in a bowl, cover with water and leave for 6-8 hours. At the same time, change the water every hour.
2. Then transfer the kidneys to a cooking pot, fill with drinking water and cook. Bring to a boil, boil for 5 minutes and change the water. Repeat this procedure at least 4 times. Boil the kidneys until tender in the fifth fluid change. Season them with salt 20 minutes before the end of cooking. They should also be salted after changing the last water.
3. Remove the finished kidneys from the water and leave to cool so as not to burn yourself. After cooking, they will decrease in volume by about half.
4. Then cut the offal in half, cut out the capsule with the outer blood vessels and ureters. Cut them into strips or cubes as you like.
5. Rinse the apple under running water and dry it. Remove the seed box with a special knife and cut into slices. Remove the husk from the garlic and cut into strips.
6. Pour vegetable oil into a frying pan and heat. Put kidneys, apples and garlic in it.
7. Fry over medium heat for literally 5 minutes to soften the apples and season the food with a pinch of salt and black pepper. You can also add any spices to taste.
8. Add the mustard to the skillet and add the soy sauce. Boil, cover and simmer for about 10 minutes. Do not keep on fire for too long so that the apples do not turn into a puree-like consistency. They should remain slices and serve after cooking. Enjoy it with mashed potatoes or boiled rice.
