Making cheese balls
1. Grate the cheese on a medium or fine grater. I advise you not to use a large grater, as large pieces of cheese will not melt well in deep fat, the balls will be covered with a golden crust, and the cheese will remain hard inside.
2. Beat the egg into a bowl.
3. Whisk the egg until it turns into a homogeneous liquid.
4. Put cheese shavings in the egg mass.
5. Stir in the cheese shavings to form a sticky mass. It is most convenient to do this with your hands.
6. Take a portion of the dough with a teaspoon and roll it into a ball no larger than a walnut. If the balls are too large, the cheese may not cook well inside. Pour ground crackers into a flat, shallow bowl. You can buy them or make them yourself.
7. Take cheese balls and roll in breadcrumbs. If you want to have a denser crust, then do the following procedure. Roll the ball in breadcrumbs, then in an egg, again in breadcrumbs, again in an egg and in breadcrumbs.
8. Prepare deep fat. If you have a special device for this, take it. Otherwise, a bowl, saucepan, stewpan, mug, or any spatula with holes will work to remove the balls from the boiling oil.
9. Heat oil well and lower the cheese ball to simmer. When it has a characteristic golden brown crust, remove it from the oil.
10. Place the balls on a paper towel so that it absorbs all the oil and the balls become less greasy.
11. Serve the finished cheese balls to the table only hot, while the inside is melted and stringy cheese.
