Recipe for making meat balls from rice and minced pork or beef called "hedgehogs". A simple everyday dish for every housewife.

The recipe for this second, hot dish itself is not complicated and does not require any special ingredients. Hedgehogs can be made as a daily main course and served with sour cream - it turns out tasty and high-calorie, since the main ingredient is minced meat (pork or beef). And you will not need to play with rice - rinse several times. For more natural and thorny hedgehogs, it is better to use long grain rice.

Ingredients:

  • Minced meat - 650 g (pork or beef)
  • Rice - 200 g (1 cup)
  • Bulb onions - 1 pc. (average)
  • Carrots - 1 pc. (small)
  • Egg - 1 pc.
  • Dill greens - 1 bunch (large)
  • Bay leaf - 3 pcs.
  • Salt, black pepper
  • Vegetable oil for frying
  • Oregano - a pinch to taste

1. Cut onions into quarters. 2. Peel, wash and coarsely grate the carrots. 3. Pour oil into a skillet and heat. Put onions, carrots, then salt and pepper everything. Fry, stirring constantly, until the onion is yellowish. Do not fry too much.

4. Next, put the minced meat in a bowl (I bought pork and passed it through a meat grinder, I recommend doing it too, do not buy ready-made minced meat, it is of poor quality and contains a lot of fat). Put the fried onions and carrots into the minced meat, drive in one egg and salt everything well again, a little pepper and, if desired, add a small pinch of spice - oregano. 5. Chop the dill. 6. Add dill to the minced meat, and also add a glass of rice (you don't need to rinse it, it should help stick our meat balls together).

7. Now you can mix all the ingredients well in a bowl, do it with your hands. Roll balls no larger than 3/4 of a chicken egg. 9. Place the balls in a saucepan and add water to the top, bring to a boil and remove the foam. Then put the bay leaf, cover and cook over low heat for about 50-60 minutes.

10. Readiness can be checked by testing the rice for readiness. Remove the bay leaf from the prepared balls. 11. The remaining liquid must be drained, it can be used as broth for the first. 12. Let our hedgehogs cool down a bit and serve.

It is better to spread on a plate with a tablespoon so as not to damage or break them. Serve with sour cream. I make them strong, they don't fall apart.

Meat balls with rice can be stored in the refrigerator for 1-2 days. They can be served cold on the table, they are no worse than freshly prepared ones. Dill is not worth saving here, it is also important in this dish, like rice with meat. It gives a great aroma that makes you eat more and more.
