Baked blue and white eggplants in the oven with sauce is a tasty and healthy dish that goes with a lot of ingredients. If you cook them every day in different versions, then they will never get bored. Such a dish contributes well to a balanced diet, it is at the same time a source of valuable substances for the body, such as potassium, phosphorus, iron, vegetable proteins … they are almost impossible to spoil.

Ingredients:
- White eggplant - 1 pc.
- Sweet pepper - 1 pc.
- Vegetable oil - for frying
- Soy sauce - 2-3 tablespoons
- Greens - a bunch (any)
- Blue eggplants - 1 pc.
- Onions - 1 pc.
- Ground black pepper - a pinch
- Salt - 1 tsp or to taste
- Tomatoes - 2 pcs.
Step-by-step cooking of blue and white eggplants in the oven with sauce, recipe with photo:
1. Peel the bell peppers from the seeds with partitions, cut the stalk, wash, dry and cut into small cubes. Peel the onions, wash and cut into small cubes.
2. Heat vegetable oil in a frying pan and add onion and pepper.
3. Saute vegetables over medium heat until lightly browned.
4. Pour the soy sauce into a skillet and simmer the vegetables, covered, over low heat for 5 minutes.
5. Wash the eggplants and tomatoes, dry with a paper towel and cut into rings of the same size, about 0.5 cm thick.
Prepare the eggplants correctly for baking, i.e. remove the bitterness from them. To do this, cut the fruits in half, salt, leave for 20 minutes and rinse under running water. All bitterness will be removed along with the juice. However, this procedure should be done only with large ripe fruits, because there is no bitterness in a young vegetable. It is also absent in the white eggplant variety.
6. In a baking dish, place alternating white and blue eggplants.
7. Place the tomato rings on top.
8. Season vegetables with salt and black pepper. Wash the greens, dry them, chop them finely and put them on top of the vegetables.
9. Drizzle the fried onions and peppers over the food.
10. Cover the mold with a lid and send to a heated oven up to 180 degrees for half an hour.
11. Serve hot or cold cooked blue and white eggplants in the oven with sauce. The meal can be on its own or served as an addition to meat or fish.
