2. Add flour to the food, sift it through a fine sieve to enrich it with oxygen, so the baked goods will be softer and tastier. Also add a pinch of salt and half a serving of sugar.
3. Place the food processor on the appliance and turn on the medium speed.
4. Knead an elastic and soft dough so that it falls away from the walls of the dish.
5. Remove it from the bowl of the combine, wrap it with your hands and shape it into a ball. If you don't have a food processor, knead the dough with your hands. At the same time, keep in mind that shortbread dough does not like long kneading. From the warmth of the hands, the butter begins to melt, and the structure of the finished baked goods will change for the worse. So do it quickly.
6. Wrap the dough in a plastic bag and refrigerate for half an hour or freezer for 10-15 minutes. Although you can keep the dough in the refrigerator for a day, and then bake a pie. Or freeze it in the freezer for 3 months.
7. Remove the dough from the bag and divide into 2 parts, one of which should be larger. Roll out most of the crust and place in a baking dish, which will be covered with parchment paper.
8. Defrost apricots by this time, put in a sieve and leave to drain all the juice. Grate the second part of the dough on a coarse grater and sprinkle with apricots.
9. Preheat the oven to 180 degrees and send the frozen apricot shortcrust cake to bake for 40 minutes. When it is golden brown, remove the product from the oven and leave to cool. Because if you remove it from the mold while hot, it can break.
