My family is very fond of all kinds of pastries. Naturally, I want to diversify what is served on the table for my close people. That is why the simplest and most familiar dishes are slightly modified, and, depending on the season, different components get into them. So, for example, in the dough for ordinary pancakes, in other words, fluffy pancakes, akin to our pancakes, I put seasonal berries or pieces of fruit. Today I have a glass of wild blueberries. Ingredients:
- Flour - 1 tbsp.
- Kefir - 1 tbsp.
- Blueberries - 1 tbsp.
- Sugar - 3 tbsp. l.
- Salt - 1 pinch
- Vegetable oil - 2 tbsp. l.
- Baking powder - 0.5 tsp
- Soda - 0.5 tsp
- Eggs - 2 pcs.
Step-by-step preparation of pancakes with blueberries on kefir
Combine sugar, eggs, vegetable oil and a pinch of salt. The butter for the dough should be well chilled, so put it in the refrigerator for 20-30 minutes. Using a mixer, we will beat the components until they double in volume.
Pour in a glass of kefir and beat the mixture well again.
Combine the sifted white wheat flour separately with baking soda, baking powder and then gradually add to the dough. Stir until smooth.
We divide the sorted, washed and dried blueberries by eye into two unequal parts, the most of which we add to the finished pancake dough and mix. Voila! The dough is ready.
Preheat a skillet over medium heat. The peculiarity of pancakes is that they are baked in a dry frying pan, however, so that the first pancake is not lumpy, grease the surface a little with vegetable oil. Pour 2-3 tbsp into the center of the pan. l. or half a ladle of batter. We wait until air bubbles appear on the surface, and turn the pancake over to the other side.
Serve by stacking pancakes and placing a small piece of butter between each. For a more effective serving, prepare blueberry sour cream sauce. To do this, beat half a glass of sour cream with 2-3 tbsp. l. sugar and leftover blueberries. Pour blueberry sauce over the pancakes.
