Pancakes, pancakes … They are always baked in large quantities so that every eater can enjoy it to the fullest. There are fatty options, less fatty, salty, and unleavened pancakes. But still the most popular and beloved are sweet pancakes with raisins. There are many options, but most often they are cooked with kefir. But in this recipe I replaced the usual flour with semolina. This did not affect the taste in any way, the pancakes only became more tender. Tempting in appearance and aroma, they flew at me in an instant. I am sure that such a dish will not leave anyone indifferent, even the most strictly gourmet. It is not without reason that pancakes are considered the most romantic breakfast.

I cooked them with raisins, this is the most common filling. However, the pancakes will be tasty and empty without filler. Or use seasonal fruits. Small pieces of the sun, lush, ruddy, with golden toasted edges, will still be tasty and aromatic. You can serve such a gourmet with jam, honey, sour cream, jam, grated fruits, you can pour them with chocolate icing or put a scoop of ice cream. However, fantasize and pamper your loved ones! And now I will reveal a few secrets for you to take note of.

  • By adding more semolina, the pancakes will be fluffier and denser than batter.
  • If you put very little semolina, then the products will turn out to be flat, but the most delicate.
  • Kefir will go both fresh and sour. The more sour it is, the fuller and tastier the pancakes.
  • The fermented milk product must be slightly heated before cooking so that the soda extinguishes the acid it contains and looses the dough.
  • Spray the baking soda gently over the dough, and do not put it in one piece.
  • Instead of kefir, sour cream, yogurt, fermented baked milk, natural yogurt are suitable.
  • The finished dough should not be poured from the spoon, but flow smoothly from it into the pan.
  • Place the dough in the pan using a tablespoon so that the pancakes do not come into contact with each other.

  • Semolina - 3/4 tbsp.
  • Eggs - 1 pc.
  • Raisins - 100 g
  • Sugar - 3 tablespoons or to taste
  • Salt - a pinch
  • Soda - 1 tsp without top
  • Vegetable oil - 2 tablespoons

1. Pour kefir at room temperature into a bowl for kneading dough. Since it should be warm, remove it from the refrigerator beforehand. Alternatively, preheat in the microwave before cooking. Pour soda into kefir and stir. It will start to foam right away. This means that the soda has reacted with an acidic environment. Next, break the eggs, pour the protein into a bowl, and add the yolk to the kefir. To avoid extinguishing the baking soda reaction, the eggs should also be warm.

2. Stir the liquid ingredients and add the semolina little by little.

3. Knead the dough. Its consistency will be watery. Pour in vegetable oil and mix the dough again. Leave it to stand for 20 minutes so that the semolina swells and the dough thickens.

4. Meanwhile, wash the raisins and pat dry with a paper towel. If it is very dense, then you can steam it with boiling water for 5 minutes.

5. Whisk the whites into a tight, firm white foam, which is sent to the bowl with the dough. Stir the dough gently from top to bottom, so as not to precipitate the airiness of the proteins.

7. Before baking pancakes, grease the frying pan with a thin layer of butter and spread the dough with a tablespoon. Bake pancakes on medium heat on both sides for about 1.5 minutes until golden brown. Serve them to the table immediately after cooking with any watering.
