Barley porridge is rightfully the queen of cereals. Inexpensive, dietary, tasty. It was she who enjoyed immense popularity in ancient times. It is prepared with mushrooms, meat, vegetables and fruits. We will diversify the daily menu with a new, tasty, and at the same time not expensive dish. Let's prepare barley with pumpkin. Pumpkin with pearl barley is a real little masterpiece. This is a wonderful side dish for homemade lunch and dinner. It can be submitted to the post, tk. it does not contain meat. If desired, porridge can be made sweet or salted. The recipe is a bit lengthy, because pearl barley must be prepared in advance, i.e. soak. But your labor costs are minimal here. It is because of the duration of cooking that many housewives do not like to cook barley. But there are no problems with cooking porridge. Ingredients:
- Pearl barley - 100 g
- Pumpkin - 200 g
- Butter - 40 g
- Sugar - optional
- Salt - a pinch
Step by step cooking pumpkin with barley, recipe with photo:
1. Sort the pearl barley by removing the garbage. Pour it into a sieve and rinse under running water, rinsing off all dust well. Pour it into a plate and cover with water at room temperature. The amount of water should be twice the volume of the cereal. Leave the barley for 2 hours.
2. During this time, the cereal will increase in volume and absorb the liquid. Return it to the strainer and rinse again.
3. Transfer the barley to a cooking pot.
4. Add a pinch of salt, sugar if desired and cover with drinking water. Also take twice as much water as grains. Bring the porridge to a boil, reduce the temperature to the lowest setting, cover and cook for 1 hour until soft.
5. After an hour, taste the barley. If it is ready, then drain the rest of the liquid.
6. While the barley is cooking, prepare the pumpkin. Peel it of peels, seeds and fibers. Cut into pieces the size you want to see on your plate.
7. Melt the butter in a skillet.
8. Place pumpkin in a skillet with oil and fry until golden brown. The consistency of the pumpkin should be soft without decaying. She must keep her shape. Although, if desired, the finished pumpkin can be mashed and combined with porridge. This is already a matter of taste.
