A traditional Japanese dish, catfish stewed in a sauce, is considered a rural dish and is made from a wide variety of fish. Therefore, in the absence of catfish, take the fish that you like the most or are available. Almost any fish that is sold in our stores is suitable for the recipe: both sea and river. But it is better to give preference to fish with white meat. Such meat goes well with various boiled or steamed vegetables, pieces of ginger root, fresh herbs, white rice.
Home-cooked fish retains all its taste. The dish is prepared very quickly. Since there are no tough tissues in fish and seafood, cooking them takes a little time. Eating stewed catfish in a sauce is delicious both hot and cold. It can even be prepared in advance and left for the next day.

Step by step cooking of stewed catfish in Japanese style in sauce, recipe with photo:
1. Since catfish steaks are sold in our country most often frozen, defrost it first. Do this naturally without using the microwave. Place the fish in a bowl and place on the bottom shelf of the refrigerator. When the fish is thawed, wash it under running cold water and dry well with a paper towel. Then remove the skin from it, separate the fillet from the ridge and cut the meat into elongated pieces.
2. Peel onions and garlic, wash and chop: onion in thin half rings, garlic in thin strips.
3. Put fish meat, onion and garlic in a deep bowl and add chopped cilantro.
4. Season food with ground black pepper and fish seasoning.
5. Then salt them.
6. Pour 9% soy sauce and vinegar into a bowl. Mix the food well and leave to marinate for half an hour.
7. Pour vegetable oil into a frying pan, heat well and add fish and onions. Pour all the sauce in which you marinated into the skillet.
8. Simmer Japanese-style catfish in sauce over medium heat, stirring occasionally. It takes no longer than 10 minutes to cook. When the fish and onions have a light golden hue, remove them from the pan. Serve immediately after cooking, although it tastes just as good after cooling.
