One of the best ways to prepare a heart is to stew it in a sauce. Since the heart is a loaded muscle in animals, it therefore has coarse fibers and tough tissues that require longer heat treatment. Therefore, today we will cook a beef heart with onions and garlic in sour cream-mustard sauce. A properly cooked stewed heart contains 10 times more deficient vitamin B12 than regular meat. In addition, at the time of preparation, the specific smell of boiled offal is practically not felt.
Heart stewed with sour cream, onions and garlic is a nutritious and satisfying hot second dish. If you have a ready-made boiled heart, you can cook a dish very quickly. Mustard is added to the dish, along with sour cream, which gives a piquant spiciness. But if you wish, you can add a little more tomato paste, season with ground paprika and other spices to taste. Moreover, you can buy not a whole heart, but a half or even a quarter. It turns out the dish is unusually tasty and tender, and most importantly healthy. Use the dish as a daily lunch or dinner. You can serve it with any side dish: mashed potatoes, stewed vegetables, cereals or pasta.

Ingredients:
- Beef heart - 0, 5 pcs.
- Salt - 2/3 tsp or to taste
- Garlic - 2 cloves
- Ground black pepper - a pinch
- Vegetable oil - for frying
- Onions - 1 pc.
- Mustard - 1 tsp
- Sour cream - 3-4 tablespoons
Step-by-step preparation of beef heart with onions and garlic in sour cream-mustard sauce, recipe with photo:
1. Rinse the beef heart thoroughly under running cold water. Clean the vessels well from blood clots. Dip it in a saucepan, cover with cold drinking water and bring to a boil.
2. Boil the heart for 3-5 minutes and pour the broth. Rinse the heart, cover with clean water and bring to a boil again. Season with salt to taste and cook until tender for about half an hour. If desired, add peeled carrots and onions during cooking. Then you get a fragrant broth that can be used to cook soup.
3. Cool the heart a little and cut into small pieces of any size: cubes, straws, bars …
4. Peel the onions and garlic, wash and chop into thin quarter rings and strips, respectively.
5. Pour vegetable oil into a frying pan, heat and send the prepared onion with garlic.
6. Saute the onion and garlic over medium heat until transparent, golden and soft.
7. Add the boiled and chopped heart to the pan. Pour in sour cream, add mustard, season with salt and black pepper. Add any spices and herbs as desired.
8. Stir food and bring to a boil. Reduce the temperature to the minimum setting, cover the pan with a lid and simmer the beef heart with onions and garlic in sour cream-mustard sauce for 20-25 minutes. Serve the stewed beef heart with boiled rice, boiled potatoes or any other side dish.
