Today's recipe is dedicated to the preparation of stewed zucchini with vegetables according to Dukan. Dukanovsky dishes are suitable for any other diet, due to their carbohydrate-free and low-calorie content.

Stewed zucchini is an easy and quick dish to prepare. They can become the main horse in the creation of a dietary menu. You can cook a vegetable zucchini stew according to Dukan in just 45 minutes. The recipe is very simple, the ingredients are available and the cooking time will take a little. And by combining juicy vegetables, for example, with chicken breast, which is allowed to be consumed on the Ducan diet, this dish will appeal to all family members.

Ingredients:
- Zucchini - 1 pc.
- Spices, herbs, herbs - to taste
- Garlic - 2 cloves
- Onions - 1 pc.
- Salt - 1 tsp no slide or to taste
- Bitter pepper - 0, 5 pcs.
- Vegetable oil - for frying
- Tomatoes - 2 pcs.
- Ground black pepper - a pinch
- Carrots - 1 pc.
Step-by-step cooking of stewed zucchini with vegetables according to Dukan, recipe with photo:
1. Peel the onions, rinse with running water, dry with a paper towel and cut into medium-sized cubes.
2. Peel the carrots, wash and cut into cubes of the same size as onions.
3. Wash the zucchini, dry with a paper napkin and cut into cubes 2 times larger than onions and carrots. Use dairy zucchini, as they have a thin peel and practically no seeds, and if they are, they are very small. Ripe old fruits will have to be peeled from the dense skin and large seeds cut out.
4. Peel the garlic, wash and cut into small pieces. Peel the bitter pepper from the seeds with partitions, cut off the stalk and finely chop.
5. Wash the tomatoes, dry with a paper towel and cut into cubes. Take fruits with dense pulp so that the tomatoes do not turn into mashed potatoes in the finished dish. If, on the contrary, the goal is to use tomatoes in the form of a sauce, take them softer and chop them very finely or twist them through a meat grinder.
6. Pour 1 tsp into the pan. vegetable oil, you can and less. It is necessary that the bottom is only slightly oiled so that the vegetables do not burn. Indeed, according to the Ducan diet, oil is not used at all, but steamed products are prepared. Heat oil well and sauté onions and carrots until light golden brown. If the vegetables burn, add some drinking water.
7. Add the zucchini to the skillet and continue sautéing / stewing over medium heat for another 10 minutes.
8. Next, add the tomatoes and season the vegetables with salt and black pepper. Continue to fry the stew until it reaches the consistency you want. If you like to keep the pieces intact, fry the vegetables for 15-20 minutes. If you want the dish to become soft and tender, cover the pan with a lid and simmer for 40 minutes. Serve ready-made stewed zucchini with vegetables according to Dukan to the table, both warm and chilled.
