From a minimum of products (namely, a couple of eggplants, two eggs and an onion), you can prepare a surprisingly tasty snack - baked eggplant and eggs pate. Such an appetizer is perfect for breakfast, and during a lunchtime snack at work or school, and it will be appropriate on a festive table. Moderately peppery, with a pleasant aroma of baked vegetables, it will be greeted with a bang by your guests. Cooking it is as easy as shelling pears, combine all the ingredients and grind with a blender. And if you bake the eggplants not in the oven, but over a fire, the pate will have an unusually pleasant aroma of haze.

Ingredients:
- Eggplant - 1 pc.
- Chicken eggs - 2 pcs.
- Bulb onions - 1 pc.
- Garlic - 1-2 cloves
- Salt, pepper - to taste
- Vegetable oil - 1 tbsp. l.

Wash the eggplant, pierce it in several places with a fork so that it does not burst, and put it in a cast-iron pan. We put in an oven preheated to 200 degrees for 15 minutes. Turn over every 5 minutes so that the eggplant is baked evenly on all sides.
Peel the onions and garlic, chop them arbitrarily. Pour some vegetable oil into a frying pan, throw chopped garlic into it, and after 2-3 minutes onion and reduce the heat. Fry the onion under the lid until transparent and ruddy sides. You can add a pinch of sugar to give the onion a light caramel flavor.
Remove the skin from the baked eggplants, add fried onions to them. Hard-boiled chicken eggs, cool, peel and add to prepared vegetables.
Salt and pepper all the ingredients to taste, add a spoonful of vegetable oil - olive, corn or refined sunflower oil. Puree everything with an immersion blender into a homogeneous mass.
Serve pâté with slices of your favorite bread or homemade cakes.
