Ingredients:
- Sweet bell pepper - 5 pcs.
- Ground black pepper - a pinch
- Carrots - 1 pc.
- Vegetable oil - for frying
- Hot pepper - 0.5 pods
- Eggplant - 1 pc.
- Dill - bunch
- Tomatoes - 2 pcs.
- Salt - 1 tsp or to taste
- Onions - 1 pc.
- Garlic - 2 cloves
Step-by-step preparation of stuffed peppers with vegetables according to Dukan, recipe with photo:
1. Peel the carrots, wash, dry with a paper towel and cut into small cubes. Peel the onions. Rinse and cut into cubes as well.
2. Wash the eggplants, cut off the stalk and cut into small pieces. If the fruits are ripe, then pre-soak them in a saline solution for 20 minutes to remove the bitterness from them. 6. Add chopped herbs, garlic and hot peppers to the pan. Season with salt and pepper. Stir and simmer over low heat, covered for 5 minutes.
7. Wash the bell peppers, dry with a towel and cut along with the tails. Remove the seed box. If you cut off the tails, the peppers will decay during baking. Stuff the peppers with the vegetable filling and place them in a baking dish or baking sheet.
