Duck is prepared in many different ways. The most popular dish is roasting poultry in the oven. But we'll talk about how to cook stewed duck in soy sauce with adjika on the stove. During the cooking process, duck meat requires attention so that it does not get dry and tough. Therefore, it should be pre-marinated. Soy sauce and adjika are perfect for these purposes. It turns out a bird in such a marinade is simply divine, soft and tender. It is the perfect dish for an everyday dinner, but it is also perfect for a small party table. However, keep in mind that one small duck can only feed 4-5 people.
To stew poultry, use thick-walled dishes: a cauldron, a frying pan, a stewpan. This container will ensure even cooking of the meat. Since duck meat is quite fatty, then it must be served with a side dish, for example, with vegetables. It is important that the meat is easy to digest and does not add extra pounds. Ingredients:
- Duck - 1 carcass
- Onions - 2 pcs.
- Salt - 1 tsp or to taste
- Vegetable oil - for frying
- Soy sauce - 3-4 tablespoons
- Hot red pepper - a pinch
- Adjika - 2-3 tbsp
Step by step cooking stewed duck in soy sauce with adjika, recipe with photo:
1. Wash the duck, scrape off the skin by washing off the black tan. If there is a lot of fat on it, cut it off. It can be used in place of oil when frying or steaming vegetables. Then cut the carcass into pieces.
2. Peel the onions, wash, dry with a paper towel and chop into thin half rings.
3. Pour vegetable oil into a frying pan and heat well. Then place the bird in the pan so that the pieces are in one layer and are not piled up in a pile. Turn the heat on a little over medium and roast the duck until golden brown on all sides.
4. Add the prepared onion to the duck pan.
5. Reduce the heat to medium and continue to fry the food for about 15-20 minutes until the onions are translucent.
6. Add adjika to the pan and pour in the soy sauce. Season with hot pepper and salt. But be careful with the salt, because it is present in soy sauce and adjika. Therefore, you may need less of it.
7. Stir the food, cover the pan with a lid, turn on low heat and simmer the duck in soy sauce with adjika for 1, 5-2 hours. Stir it periodically and make sure it does not burn. You can add herbs to the finished dish. Spicy herbs ennoble the taste of meat, making it more aromatic and nutritious.
