A simple but very tasty dish - baked duck in adjika, soy sauce and spices - will certainly appeal to absolutely all meat lovers. It seems to many housewives that duck is quite difficult to cook. But this recipe is simple enough. Thanks to the baking of the bird in a glass form under the lid, it remains very juicy, the skin is soft, and the marinade makes it golden and fragrant! But if you do not have such a shape, then you can use the usual culinary sleeve, in which the duck will turn out to be no worse. The food is exposed to extreme heat from all sides, making the meat juicy.
No one can resist this treat. Even despite the fact that the duck is considered a high-calorie bird, it is unlikely that ardent dieters will refuse it. Ingredients:
- Duck - 0.5 carcasses
- Garlic - 2 cloves
- Salt - 2/3 tsp or to taste
- Ground black pepper - 0.5 tsp or to taste
- Soy sauce - 2-3 tablespoons
- Adjika - 2-3 tbsp
- Greens (cilantro, basal) - several branches (dried herbs are used in the recipe)
- Saffron - 0.5 tsp
- Ground nutmeg - 0.5 tsp
Step by step cooking of baked duck in adjika, soy sauce and spices, recipe with photo:
1. Wash the duck, scrape off the black tan and dry with a paper towel. Chop the carcass into medium sized pieces.
2. Pour the soy sauce into a large, deep container.
3. Add adjika to the bowl.
4. Next add ground nutmeg.
5. Add saffron.
6. Peel the garlic, cut into small pieces and add to food. Also add chopped greens, which can be fresh, dried, or frozen. Then stir the sauce.
7. Send the duck pieces to the marinade bowl.
8. Stir the duck to marinade each bite. Leave it to marinate for 1.5 hours at room temperature. If you keep it in the sauce for a day, then marinate it in the refrigerator. The longer the bird is marinated, the tastier it will turn out.
9. Place the duck in a baking dish and pour the entire marinade over the bird. Season it with salt and black pepper.
10. Close the form with a lid and send it to a heated oven to 180 degrees for 1.5 hours. Roast the duck in adjika, soy sauce and spices until golden brown. Serve the dish with any side dishes or fresh vegetable salad.
