Stewed fresh cabbage with carrots is a popular native Russian recipe in the winter season. And, of course, it should be noted that the dish is available thanks to its cheap ingredients. They cook stewed cabbage in many ways, using sauerkraut, fresh head of cabbage, adding other vegetables, cereals, meat, mushrooms, sausages, with sour cream, tomato paste, etc. Today I propose to prepare the simplest recipe, which does not take much time to cook - fresh stew cabbage with carrots. Despite the simplicity of the recipe, the dish turns out to be very tasty! It can be cooked in a skillet on the stove top or in a slow cooker.
You can serve this cabbage on its own. It is a nutritious, yet light and wholesome food that saturates well, but does not burden the stomach. You can also serve any side dish with it: mashed potatoes, boiled pasta or rice. This daily dish can be consumed on fast days, and can also be included in a vegetarian lean or diet menu. Ingredients:
- White cabbage - 0.5 heads of cabbage
- Adjika - 2 tablespoons
- Ground black pepper - 0.5 tsp or to taste
- Carrots - 1 pc.
- Salt - 1 tsp or to taste
- Vegetable oil - for frying
- Ketchup - 1 tablespoon
Step-by-step cooking of stewed fresh cabbage with carrots, recipe with photo:
1. Wash white cabbage under running water and dry with a paper towel. Cut the head of cabbage in half, set aside one part, and chop the other into thin strips.
2. Peel the carrots, wash, dry and grate on a coarse grater.
3. Pour vegetable oil into a frying pan, heat and put in cabbage. It will be heaped up by a mountain, and it may seem that it does not fit. But in the process of stewing, the cabbage will decrease in volume by 2-2.5 times.
4. Next, add the carrots to the pan.
5. Season vegetables with salt and black pepper and stir.
6. Add adjika and ketchup to the pan.
7. Stir the vegetables and put the lid on the skillet. Bring the heat to the lowest setting and simmer the food for about 1 hour. Thanks to the condensation that will form under the lid, fresh cabbage with carrots will be stewed, become soft and tender. Determine the degree of doneness yourself, depending on the consistency of the cabbage you want to get: very soft or so that it remains slightly crispy. If you use cabbage for filling, cool it completely beforehand.
