Although, strictly speaking, the poppy filling is quite versatile and is perfect not only for pancakes, but also yeast rolls, shortbread rolls, etc.
The pancakes themselves are perfectly suitable for this dish, both thin and thick. I propose to make a classic version of pancakes - in milk. But you can use your favorite and favorite recipe. The main thing is that the pancake dough should turn out without lumps and with an ideal consistency.

Ingredients:
- Milk - 500 ml
- Flour - 250 g
- Eggs - 1 pc.
- Vegetable oil - 2 tablespoons
- Sugar - 4 tablespoons in pancakes and 100 g in poppy seed filling
- Poppy filling - 300 g ready-made (dry poppy seeds 100 g)
- Salt - a pinch
Cooking pancakes with poppy seed filling:
1. Combine milk, eggs, vegetable oil, salt and sugar in a deep container. Stir well with a whisk or blender to dissolve the food completely.
2. Pour flour into the liquid component.
3. Stir the food again until smooth so that there are no flour lumps. If you have a blender, then use it. It kneads the dough well until smooth.
4. Heat the frying pan and coat with a thin layer of butter or lard. This action should be done only once before baking the first pancake, so that it does not turn out "lumpy". Next, bake pancakes without greasing the surface. Spoon the dough with a ladle and pour it into the middle of the pan. Twist it in all directions to distribute the dough evenly. Turn on medium heat and bake the pancakes for about 2 minutes. Then flip it over and fry for no more than a minute. from another turn, pancakes are cooked faster.
