  • Jam … Soak the main ingredient (300 g) in cold water and let sit for 20 minutes. Then strain it through a sieve, separate from the green parts, cover with sugar (700 g) and stand for about an hour. Next, add lemon juice (50 ml) and put the mixture on fire. Boil it and reduce the gas, then keep the mass on the stove for about an hour, stirring regularly. During this time, prepare the jars and lids by washing and sterilizing them. After the jam is ready, put it in containers, roll it up and send it to the basement. It will be very useful in winter, as it boosts immunity and improves health.
  • Filling for pies … Go through the flowers (300 g), wash and let them drain. Then chop them and simmer until soft in a saucepan, pouring vegetable oil there in advance. Then add one raw egg and two boiled eggs, salt and pepper the mixture to taste. Keep it on low heat for about 3 minutes, turn it off, refrigerate and use to make fried or brass pies.
  • Breaded … First, soak the flowers (1 kg) in cold water (2 L) and lemon juice (100 ml). Next, prepare the batter by mixing premium wheat flour (3 tablespoons), ghee (2 tablespoons), icing sugar (10 g), milk (90 g), a little ground chili and vegetable oil (1 tablespoon. l.). Salt this mixture to taste, dip the prepared bunches in it and fry them in butter on both sides until a slight golden crust appears.
  • Cutlets … Put 150 g of plant flowers in boiling salted water, boil them for 10 minutes, then add semolina (20 g) and, stirring, keep on low heat until the mass thickens. Then cool it, drive in one egg, add salt and pepper to taste, roll cutlets out of it, roll them in breadcrumbs and fry in vegetable oil for 5-7 minutes. Once golden brown, fold them on a baking sheet and place them in a well-heated oven for 10 minutes. Pour sour cream over the dish before serving.
  • Salad … Pour boiling water over the flowers (150 g), dry them after 10 minutes and sprinkle with chopped green onions. Then add the chopped, soft-boiled chicken egg. Top with dill, basil and white loaf croutons. Pour homemade sweet sour cream over it and serve on lettuce leaves.
