The pork shank, or as it is also called the shank (the part of the pork leg adjacent to the knee joint), is loved by most people, which is not strange. Most often, the back pork knuckle is used for cooking, because it is more meaty. Although there is quite enough meat on the front leg, it must be borne in mind that they are also more sinewy.

In finished form, it tastes like boiled pork, but much softer and juicier. A cooked piece of pork leg is perfect for a full dinner or lunch for two adults. At first glance, it may seem that this is a lot. But it is necessary to make allowances for leather, fat and bone. This standard part of the animal's carcass in its raw form weighs about 1.2 kg.
You can bake it in a variety of ways. For example, boil it first, and then send it to the oven. But you can immediately start the baking process. Today we will cook it bypassing cooking, but first marinate it in a spicy sauce with spices. Such a shank will be more ruddy, tasty and aromatic.

Ingredients:
- Pork knuckle - 1 pc. (this recipe uses 2 small pieces)
- Garlic - 3 cloves
- Ground black pepper - a pinch
- Any spices and spices to taste
- Soy sauce - 4 tablespoons
- Mustard - 1 tsp
- Mayonnaise - 2 tablespoons
- Lemon - 1 pc.
- Salt - 1 tsp or to taste

1. In a small container, combine all the herbs and spices for the sauce. Squeeze the juice out of the lemon, but you can also grate the zest on a grater.
2. Add finely chopped or pressed garlic. Mix well.
