The motto of Czech cuisine is the ultimate satiety, in order to gorge on one dish, which can replace the first, second, and third. Czechs pride themselves on creating a huge variety of dishes and recipes from a single piece of meat. And the real visiting card of the local culinary tradition is considered to be "baked boar's knee", that is. in our opinion pork knuckle. Its weight is usually a kilogram or more. It is prepared, as a rule, pre-marinated in beer, and then baked in the oven. In our country, modern housewives have slightly modified this dish and began to marinate in a variety of sauces and spices.
Also, to save time, Russian women began to cook vegetables immediately with the knuckle. This makes for a hearty lunch or dinner for the whole family. The dish is served mainly with horseradish, mustard, pickled peppers or sauerkraut. However, boar knee can be consumed with a glass of beer and with a variety of vegetable salads. By the way, in Bavarian cuisine, a glass of good beer is considered the best addition to a shank.

Ingredients:
- Pork knuckle - 1 pc.
- Potatoes - 2 pcs.
- Carrots - 1 pc.
- Apple - 2 pcs.
- Onions - 1 pc.
- Garlic - 1 head
- Mustard - 1 tsp
- Soy sauce - 2 tablespoons
- Basil greens - a couple of twigs
- Salt - 1 tsp or to taste
- Ground black pepper - a pinch
Step by step cooking of baked pork knee with potatoes
1. Prepare the sauce in a small container. Combine mustard, soy sauce, salt, black pepper, and finely chopped basil. If you wish, you can add any spices and herbs to taste.
2. Wash the pork knuckle under running water. If there is black tan, then scrape it off and clean the dirty areas. Also singe the hairs if they remain. After the knee, dry it with a paper towel and coat with sauce. Here you can now leave it to marinate, or immediately send it to bake. The pickling time can be different from an hour to a day.
3. Select a baking dish and place the shank in it. Peel the potatoes, rinse and cut into large pieces into 2-4 pieces, which are spread around the knee.
4. Peel the carrots and rinse, cut into large cubes and place on top of the tubers.
5. Remove the husk from the onion, cut into four pieces and send to a baking dish. Remove the core from the washed and dried apple with a special knife, cut the fruit into four parts and place with vegetables. Peel the garlic cloves and arrange in the shape. Season food with salt and ground pepper on top.
6. Cover the form with food foil or a lid if available and send to the oven heated to 200 ° C for 2 hours.
7. If you want to get a shank with a crispy crust, then remove the foil half an hour before cooking. If you keep it under the lid all the time, then the skin will turn out to be soft. Serve the knee by placing it on a wide, flat dish, and spread the baked vegetables around.
