Today, pork is used as a meat base, which, if desired, can be replaced with beef, lamb, poultry, rabbit and even fish. Vegetable composition can be concise, including only potatoes, carrots and onions. Or often the dish is supplemented with other products: tomatoes, bell peppers, zucchini, beans, peas … If you want the roast to be more dietary, then put the components in a freshly stewed container. Ingredients:
- Pork - 500 g
- Tomatoes, tomato paste, frozen tomato puree or tomato juice - 200 g
- Carrots - 2 pcs.
- Ground black pepper - 0.5 tsp or to taste
- Vegetable oil - for frying
- Potatoes - 3-4 pcs.
- Sweet and bitter pepper vegetable dressing - 1 tablespoon
- Bay leaf - 2 pcs.
- Salt - 1 tsp or to taste
- Allspice peas - 3-4 pcs.
Step by step cooking rustic roast with pork, recipe with photo:
1. Wash the pork under running water and dry with a paper towel. Cut off the film and excess fat. Cut the meat into medium pieces, about 5 cm.
2. Peel the carrots, wash and cut into 1x3 cm bars.
3. Peel the potatoes, wash and cut into 4-6 slices, depending on the size of the tubers.
4. Heat vegetable oil in a frying pan or cauldron and add the meat. Fry it over high heat until golden brown, which seals all the juice inside the pieces.
5. Add carrots to the meat and reduce heat to medium. Continue to fry the food, stirring occasionally, until the carrots are golden brown.
6. Add potatoes to food, stir and fry for 5-7 minutes.
7. Add vegetable dressing and any kind of tomato to the food.
8. Fill the components with drinking water, salt and pepper. Place bay leaf and peppercorns. If you wish, you can add any other spices and spices. The amount of water can be different, depending on what you want to get the dish: the first or the second.
Bring the roast to a boil, cover the pot, and reduce the heat to very low. Simmer the dish for 1, 5 hours over the slowest heat on the stove. Or send it to a heated oven up to 180 degrees for 1-1.5 hours.
