Scientists claim that coffee is good for your health. I have no doubt about it, and I think that most coffee gourmets will support me in this. Therefore, I suggest not only drinking your favorite drink, but making all sorts of goodies on its basis, for example, coffee pancakes. Bright, slightly moist pancakes with an indescribable coffee taste and aroma will be loved from the first bite. Such a divine smell inevitably lifts the mood for the whole day!
These pancakes will serve as an excellent base for pancake cakes with cream or for stuffing curd or fruit filling. Using such pancakes, you will get a real culinary delight. Alternatively, they can be served for breakfast with warm milk or strong coffee. You can use them on their own or with condensed milk, liquid caramel, sweet butter, sour cream sauce, melted chocolate, or just with sweet jam. Thanks to their light structure, the pancakes absorb the ingredients well, creating new notes. They are very satisfying, and after eating a couple of them for breakfast, you will not feel hungry for a long time.

- Milk - 2 tbsp.
- Vegetable oil - 30 ml
- Instant coffee - 2 tablespoons
- Flour - 1 tbsp.
- Sugar - 5 tablespoons or to taste
- Eggs - 1 pc.
- Salt - a pinch
Step by step preparation of coffee pancakes, recipe with photo:
1. Pour room temperature milk into a mixing bowl.
2. Then add instant coffee.
3. Stir in the milk base, add the egg and stir again until completely dissolved. If you use brewed coffee, then pour milk into a saucepan, add coffee and boil. Remove from heat and let the milk cool to room temperature. Then strain through cheesecloth folded in half.
4. Sift flour into coffee milk through a fine sieve to enrich it with oxygen. Then the pancakes will be softer.
5. Use a whisk or blender to knead the dough until smooth and smooth so that there are no lumps. Add sugar and salt and stir again.
6. Pour odorless vegetable oil into the dough and stir. You do not need to pour oil into the dough. But then, before baking each pancake, you will need to grease the bottom of the pan with fat.
7. Heat the pan. Spoon the dough with a ladle and pour the dough to the bottom. Roll the pan in all directions to spread it over the entire surface. Before baking the first pancake, I recommend greasing the bottom of the pan with oil so that the first pancake does not turn out lumpy.
8. Fry the pancake over medium heat until golden brown and turn over to the other side. Cook it the same time and remove from heat. Serve hot pancakes with your favorite sauce.
