To make the pancakes tender, the hostesses use all sorts of tricks, for example, they put soda in the dough, beat eggs, use kefir or add cottage cheese. All of these ingredients contribute to the plump and softness of the dish. In this review, kefir and cottage cheese are used simultaneously, which makes the pancakes porous and light, slightly similar to curds. For flavor, vanillin, lemon zest, ground tangerine peels, etc. are added to the dough. But I decided to use instant coffee, which gave the dish a light coffee shade and chocolate color.
It is also worth saying that such pancakes are much healthier than other recipes. Since the dough contains cottage cheese and kefir. Everyone knows about the benefits of these products. Kefir improves the functioning of the gastrointestinal tract and helps to fight constipation. And cottage cheese is an easily digestible protein, it is rich in trace elements, and is especially appreciated due to the presence of calcium. The latter is necessary for the strengthening and growth of bones, and is especially important in childhood and after injuries. I also note that these dairy products in their own form are not very popular with children. But having prepared pancakes on them, the kids will use them with great pleasure. Ingredients:
- Flour - 150 g
- Cottage cheese - 150 g
- Kefir - 100 ml
- Instant coffee - 3 tsp
- Eggs - 1 pc.
- Sugar - 2 tablespoons or to taste
- Salt - a pinch
- Baking soda - 1 tsp
- Vegetable oil - for frying
Step-by-step recipe for making cottage cheese-coffee pancakes:
1. Place the curd in a deep bowl. If the curd is too watery, remove the whey first. To do this, put it in cheesecloth and hang it for 30 minutes.
2. Sift the flour through a fine iron sieve. Add a pinch of salt, sugar and baking soda to it.
3. Stir the food and beat in the egg. If you want to feel the granularity of cottage cheese in pancakes, then do not interfere too much so that lumps of the product remain. And if you prefer a uniform texture of the pancakes, then interrupt the mass with a blender so that it becomes smooth and uniform.
4. Pour room temperature kefir into a bowl so that the soda reacts as needed. it will not work with cold food.
5. Stir the ingredients. To make a dough with a consistency similar to liquid sour cream. I draw your attention to the fact that this way the pancakes will turn out to be softer, but thinner. If you want them to be high, then add another 100-150 g of flour so that the dough is thicker and slowly falls off the spoon into the pan. But then the pancakes will be denser and not so tender.
6. Pour instant coffee into a bowl.
7. Stir the dough until the granules are distributed throughout the volume.
8. Heat a frying pan with vegetable oil until cola. Spoon the dough with a tablespoon and pour it into the pan. Set the heat to medium heat and fry the pancakes for about 1.5 minutes until the first bubbles appear on the surface. Then turn them over and fry the same amount of time until golden brown. Serve the pancakes to the table by pouring them with chocolate paste, honey, liquid caramel, etc.
