Pork shank is the most affordable and cheapest meat for the average family. Although in many cultures, like Germany and the Czech Republic, such food is considered a national pride. Since the simplicity of the culinary techniques makes the dish easy to prepare, and it does not require a lot of experience. There are so many options for its preparation that a whole culinary section can be devoted to this part of the carcass. In this recipe, we will analyze the simplest option. I suggest first boil the knuckle in a saucepan with spices, and then bake it in the oven until it is crispy. It turns out the boiled-baked shank is juicy, tender, aromatic and fried in places.

When choosing a shank, it is best to buy a back leg. The shank (this part of the carcass is also called) consists of meat, muscles, connective tissues and fat. And it is in the hind leg that there is much more meat than in the front. Also, when buying, pay attention to the color of the skin, it should be light. Stewed cabbage is considered an ideal side dish for pork shank, its sourness gives originality to the dish. But if you wish, you can cook pork knuckle, namely, bake it in the oven at the same time as potatoes and other vegetables. This will immediately turn out a side dish, and you will not need to additionally cook or fry the potatoes.

  • Pork knuckle - 1 pc.
  • Orange zest - 1 tsp
  • Salt - 1 tsp or to taste
  • Ground black pepper - a pinch
  • Ground ginger powder - 1 tsp
  • Ground nutmeg - 1 tsp
  • Soy sauce - 50 ml
  • Garlic - 1 clove
  • Onions - 1 pc.
  • Cardamom - 3 grains
  • Cinnamon stick - 1 pc.
  • Carnation - 3 buds
  • Anise - 1 star
  • Allspice - 3 peas

1. Wash the pork knuckle well and scrub with an iron sponge to remove the black tan. Place it in a suitable sized cooking pot.

2. Fill it with water so that it completely covers the meat, boil and simmer for 5 minutes.

3. Change the water and add all the foods listed in the ingredients list to the pot. Boil and boil the drumstick for 1 hour.

4. Remove from the broth and transfer to a baking sheet. Pour a few ladles of broth onto a baking sheet. It will evaporate during baking of meat, from which the shank will be very soft and juicy. As the broth evaporates, add it to the meat.

Send the shank to bake in a heated oven to 180 degrees for 1.5 hours. Cover it with cling foil while cooking. This will create a soft crust. For crispy crust, cook the shank open. Serve hot right after cooking.
