Many people ask the question: "How to cook gilthead fish?", As well as ordinary river crucian carp or carp. This fish turns out to be very tasty, has a moderate fat content, odorless white meat and very well cleaned. Whoever has never tried it, I advise you to do it, once I bought it, now I often indulge myself with baked dorada. The dish is designed for 4 good servings.

Ingredients:
- Dorado fish - 2 pcs.
- Vegetable oil - 1/4 cup
- Garlic - 4 cloves
- Green onions - 1 small bunch
- Lemon - 4-5 slices
- Salt to taste
- Black pepper - to taste
- Dried dill - to taste
- Dried parsley - to taste
- Dried basil - to taste
- Dried oregano - to taste
Cooking gilthead fish in the oven:
Step 1. First, you need to make a sauce to lubricate our fish, and then butcher the golden spar. To do this, pour into a small bowl - glasses of vegetable oil, press 4 cloves of garlic and add finely chopped green onions. Then salt and spice to taste, I added dried: dill (most), parsley, basil, a little oregano and black pepper. Mix everything well and set aside. Naturally, dill and parsley can be replaced with fresh ones, here you should already look at what is on hand.
Step 2. While our sauce is infused, we cut the gilthead fish. To do this, rinse it under running water and remove the scales with a knife or a special fish scraper, it is very easy to remove. Next, steam the belly of the fish and remove all the insides. Since we will cook the fish with our heads, we need to remove the gills, this is done so that they do not give our sea carp a bitter taste, they are still not suitable for consumption - they are poisonous (but not such that they ate and died, but simply intolerable for our body, this is a fish filter, where all the dirt is collected). Further it is better to cut out the fins, but I did not. Leave the tail. I had milk in one fish, we leave it to cook with fish, very tasty!
Step 3. Then make vertical cuts on one side of the belly of the fish, I got four of them. Then it is good to salt the fish from all sides and inside. Cut 4 lemon wedges, then cut them into two halves and insert into the fish cuts.
Step 4. Grease a baking sheet with vegetable oil and lay out the fish. Then it is good on all sides and inside (generously) grease with garlic sauce.
Step 5. Preheat the oven to 180 degrees and bake the gilthead for 25-30 minutes.
