Cooking pumpkin porridge with rice
1
Peel the pumpkin and cut into small cubes. 2. Put the chopped pumpkin in a cauldron (not a simple pan, but for this purpose you need to take a cast-iron cauldron) and pour water twice as much pumpkin (I got 1, 5-1, 6 liters of water). The amount of water poured at this stage is a very important and decisive moment: the porridge will turn out to be liquid or very thick. Our goal is to make 3. Bring to a boil and then simmer under a lid until the pumpkin is fully cooked (boiling time depends on the type of pumpkin).
4
While the pumpkin is boiling, rinse the rice. Pour cold tap water into rice and handle it with three handles, then drain the water and repeat the process again. 5. After doing this 7 times, we will see clear water, which means that the rice is washed. 6. We return to the pumpkin. You need to try the readiness of the pumpkin with a fork, as soon as the fork pierces the pumpkin smoothly and gently, then it is ready (it is not advisable to overcook it into porridge).
7
Drain the rice and put it in the finished pumpkin, add salt and sugar. Bring to a boil and cook over low heat under the lid for about 20 minutes. You do not need to open the lid and stir it. 8. Closer to the readiness of the rice, you need to boil milk separately. 9. Pour boiled milk into cooked rice with pumpkin, and add butter.
10
Gently stir the pumpkin porridge and, without closing the lid, cook over low heat for 8-10 minutes, stirring occasionally so as not to burn. 11. Set aside the prepared porridge from the heat and cover with a lid, so let stand for 30-60 minutes. 12. Now the pumpkin porridge with rice is ready to eat.
