This light by-product does not contain coarse fibers, which makes it possible to include it even in a children's menu, because it is perfectly absorbed by the child's body.
Aspic is most often prepared from pork tongue. But the recipes are not limited to this dish. A lot of delicious holiday and everyday dishes are made from it. And the easiest way is to make a fragrant soup. Such a delicious first course will be a great success on every table.
Useful Tips for Cooking Pork Tongue

Ingredients:
- Pork tongue - 1 pc.
- Potatoes - 3 pcs.
- White cabbage - 250 g

- Allspice peas - 5-6 pcs.
- Salt - 2/3 tsp or to taste

Cooking Pork Tongue Soup
1. Wash the pork tongue, put it in a saucepan, fill it with water 2 centimeters higher and put it on the stove to cook. As the water boils, reduce heat and cook it for 1, 5 hours.
2. Since the soup will be cooked in the broth of the tongue, after 1, 5 hours of cooking, pour the water from the pan, wash the offal and put it back. Add bay leaves, peppercorns, peeled onions and a clove of garlic to it. Pour in fresh drinking water and continue cooking for 1 hour after boiling.
3. The readiness of the tongue can be checked by piercing it with a fork. A well-cooked product will be soft. It is also important not to digest the tongue, otherwise it will become tough and lose its beneficial properties, delicate taste and aroma.
4. When the main ingredient is ready, remove it from the broth, immediately place it under cold water and leave for 5 minutes. Then remove the white skin and get rid of all inedible parts: tendons and veins. Also, extract the onion, garlic, bay leaf and peppercorns from the broth.
5. Tongue cut into cubes of any size you like and put it back in a saucepan with broth.
6. Peel the potatoes, wash, cut into cubes and send after the tongue.
7. Wash the cabbage, chop finely and place in a saucepan 10 minutes before the potatoes are ready.
8. Season the soup with salt, pepper and add the washed and finely chopped dill.
9. Cook the first course until all ingredients are cooked through. At the end of the boil, adjust the flavor with salt and pepper.
