It often happens that we want something tasty, healthy and quick to cook. I want to offer you one of these dishes. This is an appetizer made from fried eggplant and zucchini.

Its advantages are that it cooks quickly and easily, even an inexperienced cook can prepare a snack for himself and for his guests. Another of its advantages is its appearance. As you know, we first evaluate everything with our eyes, and then we examine the taste. Everyone will love this appetizer.

Ingredients:

  • Eggplant - 1 pc.
  • Zucchini - 1 pc.
  • Tomatoes - 2 pcs.
  • Mayonnaise - 70-80 g
  • Garlic - 2-4 cloves
  • Salt
  • Parsley

Cooking an eggplant and zucchini snack:

  1. Cut the eggplants and zucchini into slices about 2 centimeters thick, salt and let stand a little, for 10-15 minutes. Then fry on both sides in a pan and put on separate plates. Separately zucchini, and separately eggplants - for further convenience of cooking.
  2. While our vegetables are cooling, we make a sauce from garlic (read about the beneficial properties of garlic and harm) and mayonnaise. Press the garlic on a garlic press or three on a grater, add to mayonnaise and mix well. 5 minutes and our sauce is ready.
  3. We take a dish on which we spread a layer of our eggplants, smear all of them with our sauce on top. The second layer is zucchini. Also on top of them is a layer of mayonnaise. Don't be too zealous with mayonnaise, it should be just a little, just to cover the surface of the vegetables.
  4. Then cut the tomatoes into circles and make the third layer. To cut a tomato, you need a sharp knife, if the knife blade is dull - problems with cutting a tomato are guaranteed.
  5. Sprinkle all this with chopped parsley.
