Ingredients:
- Broccoli - 300 g
- Garlic - 1 clove
- Bay leaf - 2 pcs.
- Tomatoes - 4-6 pcs. depending on the size
- Salt - 0.5 tsp or to taste
- Allspice peppers - 3 pcs.
- Ground black pepper - a pinch
- Minced meat - 200 g
Step by step preparation of dietary soup with broccoli and tomatoes:
1. Wash the broccoli under running water and pat dry with a paper towel. Cut off the leaves and slice the roach into florets.
2. Wash the tomatoes, dry and cut into 4 pieces. Choose their dense varieties so that they do not disintegrate during cooking, but remain in shape.
3. Put the minced meat in a bowl, add salt and pepper and stir. Beat the minced meat several times, i.e. lift your hands up and throw back into the plate. This action will help hold the fibers together better and the meatballs will hold better.
4. Form small round meatballs. Their size can be from 1.5 cm to 3 cm in diameter. Do as you like best.
5. Put broccoli in a saucepan, fill it with drinking water and place on the stove to cook.
6. After 10 minutes, add the prepared tomatoes to the saucepan. Season with salt and pepper, add bay leaf and peppercorns.
7. Place the meatballs next to the tomatoes. They need to be added to the dish only in boiling water, otherwise they will be rubbery. Boil the soup after simmering over low heat for 15-20 minutes. Serve it to the table after cooking. When serving, you can put croutons on a plate or add a spoonful of sour cream if you wish.
