An eggplant fan is an alternative to oven-baked eggplant sliced into rings with any vegetables. For the recipe, use small eggplants, weighing about 150 g. The filling can be varied to your liking, for example, add mushrooms, onion-carrot sautéing, minced meat, smoked-cooked sausage, ham, etc.

  • Eggplant - 2 pcs.
  • Olive oil - 2 tablespoons
  • Soy sauce - 2 tablespoons
  • Salt - 1 tsp or to taste
  • Mustard - 1 tablespoon
  • Cheese - 100 g
  • Tomatoes - 2 pcs.
  • Garlic - 1 clove

1. Wash and dry the eggplants with a paper towel. Slice it into a fan, lengthwise, in 5 mm plates, reaching with a knife to the base of the stalk. Use young fruits for the recipe, because they do not contain bitterness. If you have ripe eggplants, salt the sliced fruits before cooking and leave for 30-40 minutes to leave the bitterness. Then rinse under fresh water and dry well, then they will cook better.
