Shawarma is a popular Turkish food. It is prepared from pita bread, which is filled with minced meat and vegetables and seasoned with sauces. This dish has relatives in many countries of the world, where they call it doner, gyros, buritos, kebab, kubba. Shawarma is sold on the street and has always been famous for its great "quick" food to eat on the run. This is an excellent option for complete nutrition in situations where there is no time for long cooking. Naturally, the quality of the purchased shawarma leaves much to be desired, so many housewives got used to cooking it at home. To make it tasty for you, I will tell you the main cooking secrets.
The main point is the correct choice of lavash, i.e. it should bend well and be elastic so that it does not crack and the filling does not fall out when folded. Another important nuance - shawarma does not tolerate mustard, and it is better to use homemade mayonnaise. Any filling, except for French fries, can be used. it turns into porridge, which spoils the taste of the food. Cucumbers (fresh or pickled), Korean carrots, fresh tomatoes, grated cheese, pickled mushrooms, and shredded cabbage are perfect. Meat can be used - chicken, pork, beef. Shawarma is heated on a special stove similar to an electric waffle iron, in a thick-bottomed frying pan, or in a grill pan. But, not in the microwave, because the taste of the dish will inevitably deteriorate.

Ingredients:
- Lavash - 2 pcs.
- Chicken thigh - 2 pcs.
- Fresh cucumber - 1 pc.
- Tomato - 1 pc.
- Korean carrots - 100 g
- Green onions - bunch
- Mayonnaise - 30 g
- Ketchup - 30 g
- Vegetable oil - for frying
- Salt - 0.5 tsp or to taste
Making shawarma at home
1. Wash the chicken thigh and dry it with a paper towel. Remove the skin, it is not needed in the recipe, and cut the meat into pieces about 2 cm in size.
2. Heat a frying pan with vegetable oil and put the meat to fry. Fry over high heat until half cooked, then salt, reduce the temperature and bring to readiness, until golden brown.
3. While the meat is roasting, prepare the rest of the food. Wash and chop the tomatoes, cucumbers and green onions as shown in the photo.
4. Spread the lavash on the table and put the fried meat on it.
5. Now add all the vegetables. Place a row of cucumbers on one side of the meat and tomatoes on the other. Top with Korean carrots and sprinkle with chopped onions. Drizzle with mayonnaise and ketchup to taste.
6. Fold the pita bread with an envelope and heat it on both sides in a hot frying pan. If you want a more satisfying fatty meal, you can fry it in a pan in the oil in which the meat was fried.
7. Serve the finished shawarma to the table. You can use it by cutting it in half, or, as the street vendors sell it, put it in a small bag and wrap it in a paper napkin.
