Every housewife wants to save time on preparing a beautiful and at the same time hearty salad. The chicken and mushroom salad has a pleasant aroma and unusual taste, and it is distinguished by its ease of preparation. Having prepared this salad for a festive table, relatives and guests will surely appreciate its amazing taste and your culinary achievements. There are incredibly many options for preparing salad recipes with these products, but salads with fried mushrooms are the tastiest.
I chose mushrooms for this salad. They are affordable and easy to prepare. However, oyster mushrooms or forest mushrooms will do just as well. Any part of a chicken carcass is suitable. The most dietary is the breast, the more fatty is the thighs. It is advisable to boil the breast, so it will turn out juicier, and the thighs can be fried in pieces in a pan in vegetable oil. Classic mayonnaise is suitable for dressing, but you can use more complex sauces. You can cook such a salad both in a puff form and mixed. The last option is suitable for a daily meal, and the puff one is a festive option.

- Chicken breast - 2 pcs.
- Champignons - 300 g
- Onions - 1 pc.
- Vegetable oil - for frying
- Mayonnaise - for dressing
- Eggs - 2 pcs.
- Green onions - bunch
- Salt - 0.5 tsp or to taste
Step by step preparation of chicken and mushroom salad
1. Wash the chicken breasts under running water, remove the foil and place in a cooking pot. Pour in drinking water and boil until tender for half an hour. Then remove from the pan and refrigerate. Remove the meat from the bone and chop finely.
2. Wash the champignons, peel the caps and cut into strips or cubes. Heat a skillet with vegetable oil and add the mushrooms. Saute them over medium heat until golden brown. They will give off a lot of liquid at the beginning of frying, so turn the heat on high to evaporate faster.
3. Peel the onions, wash and chop a quarter into rings. Heat a frying pan with oil and sauté the onion until transparent over medium heat.
4. Place cooled chicken and chilled fried mushrooms in a deep salad bowl.
5. Add sautéed onions to them.
6. Boil eggs hard-boiled. To do this, put them in cold water, boil and simmer over low heat for 8-10 minutes. Then transfer to ice water to cool. Peel and cut into cubes. Send in a dish with all products.
7. Wash green onions, wipe with a paper towel and chop finely. Place in a salad bowl and pour mayonnaise.
8. Season food with salt and mix well. If you cook the salad in layers, grease each layer with mayonnaise.
9. Serve the prepared salad in a beautiful plate at the table and decorate it with a sprig of fresh herbs.
