Historically, Eastern India is called the birthplace of eggplants, but this plant is no less popular in the CIS countries. Today "little blue" people love and cook in every family. There are a lot of various recipes for their preparation, and many are quite in demand. These are fried eggplant with garlic, stuffed eggplant, eggplant rolls, eggplant caviar, etc. This recipe is also no less popular and famous. However, there is a small drawback in it - high calorie content. Those who are not afraid of extra calories will definitely enjoy the dish.
The food is prepared quite simply - the fruits are cut into small cubes or cubes and fried in a pan. After that, a little sour cream is added and the vegetables are stewed a little. In the process of cooking, garlic squeezed through a press is added for piquancy, various spices are added to taste and everything is sprinkled with chopped herbs. Optionally add mushroom seasoning for a more mushroom appetizer feel. Then the snack will taste and smell of forest mushrooms!
If you do not talk about the calorie content of the snack, then the following can be noted about the eggplants themselves. The vegetable contains many beneficial properties. They are rich in pectins, fiber and organic acids. The fruits are effectively used for medical nutrition, especially for the prevention of atherosclerosis. It also lowers bad cholesterol in the blood and normalizes bowel function.

Cooking fried eggplant
1. Peel, wash and chop the onion. Heat a skillet with oil and fry until transparent.
2. Wash the eggplants, cut into cubes, season with salt and leave to lie down for 10-15 minutes. During this time, bitterness will come out of them. After, put the fruits on a sieve, rinse under running water and wipe with a cotton towel. Heat a skillet with vegetable oil and put the eggplant to fry.
When choosing eggplants, pay attention to their appearance. The most delicious fruits are young. There are no seeds in them and they are covered with a thin skin of a dark blue color that gives off a shiny shade.
3. Saute the blue ones a little, put the fried onions to them and stir.
4. Roast vegetables over medium heat until soft, about 20 minutes. When they have a delicious blush, season them with salt and pepper, add mushroom seasoning and finely chopped onions.
5. Fry eggplants a little more until golden brown and add sour cream.
6. Close the pan with a lid and simmer the blue ones over low heat for about 10 minutes until they acquire a soft consistency.
7. The eggplants are ready and ready to be served. But before using them, chill the snack, because it is the most delicious when cold.
I note that if you are overweight, then it is better to abstain from the use of this dish, or use a small amount of it, because fried eggplants absorb a lot of oil during frying.
