- Kefir - 400 ml
- Eggs - 2 pcs.
- Sugar - 100 g
- Salt - a pinch
- Flour - 320 g
- Baking powder - 1 tsp
- Vegetable oil - 1 tablespoon
Step-by-step preparation of fluffy pancakes on kefir
1. Before preparing fluffy pancakes on kefir, make a moderately batter. For this, we combine the eggs in a separate deep container with kefir. Food can be at room temperature or chilled. Beat with a fork, whisk or mixer. You should not achieve special splendor, but you need to make the mixture homogeneous.
2. In the second deep plate, combine all dry ingredients - sugar, salt, flour and baking powder. Stir until the components are uniformly distributed.
3. Next, combine the liquid mixture with the dry one. This technology of kneading dough from two components allows to give the finished product a special texture - a slightly coarse crumb with large air bubbles and the formation of a light crust.
4. Quickly heat the pan without adding oil and pour the dough with a measuring spoon, giving it a rounded shape. In the first seconds from the heat of the pan, a light crust forms from the bottom and the moderately batter will stop spreading.
5. When holes appear on the entire surface of the pancake, this means that all the dough has set and the bottom of the pancake is baked well enough. Now it can be turned over.
6. Put all the finished cakes on top of each other in a pile, forming an attractive turret. So they keep warm until they are served. Moreover, they do not need to be greased with butter, as is customary to do with pancakes. Top with maple syrup or honey.
7. Lush kefir pancakes are ready! We serve them for breakfast or as a dessert during the day, accompanied by fresh or canned berries and fruits, candied fruits, chocolate, nut butter or condensed milk.
