Lush pancakes with golden sides did not leave anyone indifferent. Children just love pancakes. I have not yet met a child who would refuse such delicious pastries. No matter how easy the pancakes are to prepare, many novice cooks have difficulties. Either the pancakes are not lush enough, then they fall off after cooling, then they are fried from the top, and inside they remain raw. To avoid such incidents, follow the instructions and carefully read the tips.
We will not cook simple pancakes with kefir and soda, but replace the last ingredient with yeast. According to this recipe, the pancakes are very lush with a special taste. The classic recipe does not imply additions, but as soon as you get comfortable with it, you can start experimenting - add raisins, an apple, a little semolina, any berries, or you can cook non-sweet pancakes with sausages or herbs.
Helpful hints:
- Roast the pancakes at once over high heat for two minutes, then turn them over and reduce heat. With this method of frying, the pancakes are well baked inside and at the same time remain fluffy.
- Kefir can be replaced with sour milk. The pancakes will taste especially good from homemade sour milk.
- Good flour is the key to splendor. If the first batch of pancakes is not as fluffy as you would like, or they fell off almost immediately after removing from the pan, then there is not enough flour in the dough or it is not of the highest grade. In this case, add 2-3 tbsp. l. flour into the dough, mix well and let the dough stand for 10-15 minutes for the flour to release the gluten.

Step-by-step preparation of lush pancakes on kefir - a recipe with a photo
1. In a bowl, mix 1 tbsp. flour with sugar, salt and yeast. Before use, be sure to sift the flour so that it is saturated with oxygen.
2. Add warm kefir to flour and yeast. Kefir can be heated in the microwave at maximum power for 5-7 seconds. This is a quick way to heat any food to the required temperature, if you forgot to take it out of the refrigerator beforehand.
3. Put the bowl in a warm place, cover it with a towel and wait 30–40 minutes for the dough to rise. If there is no warm place, then you can do this - pour hot water into a saucepan, and put a bowl on top. Stir the dough periodically.
4. Now add the vegetable oil, preferably cold-pressed olive oil, but also sunflower oil will be appropriate. We also dress the salad with apple cider vinegar. If there is no such floor by hand, take a canteen, but in smaller quantities. When the dough rises, add the egg and the remaining flour.
5. Mix the dough well. It should be like very thick homemade sour cream. Leave the dough warm for another 15 minutes. After that, you can start frying the pancakes. Heat vegetable oil in a frying pan and spoon out the dough to form pancakes.
6. Fry pancakes until golden brown on one side and turn immediately. Reduce heat and fry, on the other side. Lush, ruddy, mouth-watering pancakes are ready.
