Korean salads are my old love, I cook different vegetables in sweet and sour, spicy marinade. Here we got our hands on Korean tomatoes for the winter. For this salad, in addition to tomatoes, we need carrots, garlic, several onions and spices. If you like peppery snacks, add a hot pepper pod. By the way, if you just want to make Korean tomato salad to serve for lunch or dinner, you can skip the final sterilization and enjoy your favorite flavor of this appetizer.

Ingredients:
- Tomatoes - 1 kg
- Bulgarian pepper - 350 g
- Carrots - 150 g
- Onions - 1 pc.
- Garlic - 1 head
- Hot pepper - 1 pc.
- Salt - 1 tbsp l.
- Sugar - 4 tbsp. l.
- Vinegar 9% - 35 ml
- Seasoning for Korean carrots - 2 tbsp. l.

Wash the tomatoes for this winter salad under running water and cut into 4 parts. We remove the ponytails. For a Korean salad, it is better to choose dense, fleshy fruits, for example, cream.
Peel the onions and cut them into thin slices. We add it to the tomatoes.
Wash the carrots and clean them. In order for the salad to look attractive, you need a grater that will help to grate the carrots into thin, narrow stripes, as is customary in Korean snacks. If you don't have such a grater, you can just use a regular grater or try and cut the carrots into thin strips.
Pass the garlic through a garlic press or grate it on the finest grater and add to the salad along with chopped herbs.
It's time for seasoning. You can use ready-made Korean carrot seasoning, or you can make it yourself. To do this, combine in equal proportions (about a teaspoon) ground coriander, ground black pepper, mustard powder, add a pinch of ground cardamom, nutmeg and 2-3 stars of cloves. Stir the salad so that all the ingredients and flavors are mixed. Cover the container with tomatoes and let them stand, let the juice out and marinate a little for half an hour. Stir the tomatoes from time to time.
We lay out the standing salad in sterile jars. The marinade that remained after the tomatoes is evenly distributed over the jars. From the proposed number of products, 3 jars of 0.5 liters each were obtained.
We sterilize the Korean style tomato jars in the usual way. For containers of 0.5 liters, 15 minutes are enough from the moment the water boils, for liter cans - 25 minutes. Please note that after sterilization, the tomatoes in the jars will settle slightly. You can divide the salad from one into two others so that the containers are full, and you still have a little to take a sample. After sterilization, roll up the salad and let it cool completely under a warm blanket.
