Any variety of plums can be used for drying, but it is best to use the variety Hungarian Italian. Plums of this variety are oval, large, blue in color with a bluish tinge. 1. Rinse the drains under running cold water. Place them on a cotton towel and dry completely. If you want to speed up the process, then wipe the fruit with a paper towel.
2. Then cut the plums on one side, bringing the knife to the bone, carefully open the plum (not to the end) and remove the bone from the middle. Do this carefully to keep the plums intact.
3. Place the whole pitted plums on a baking sheet and place in the oven. Heat it to 60 degrees and dry for about 3-4 hours with the door slightly open. Flip the fruit periodically to dry evenly on all sides. You can also dry them outdoors. But then place them in the shade and cover with gauze so that debris and dust do not sit down, and bring them indoors at night. It will take you about 3-4 days to dry outside.
Store the whole dried pitted plums in a paper bag at room temperature.
