A vegetable side dish is always a versatile solution for preparing a healthy addition to a main dish. After all, vegetables are appropriate everywhere and always. With the knowledge of how to prepare side dishes at home, you can always prepare them by combining a variety of foods to your liking.
Today I suggest you combine asparagus beans, zucchini, carrots, onions and herbs in one dish. Such a combination of products is absolutely not heavy on the stomach, at the same time quite satisfying and at the same time light for a late dinner. In addition, such a side dish, as for me, is perfect not only for every day, but also for a festive celebration. Cooking is quite easy, and even a novice cook can do this job.
In addition, you can expand the range of vegetables. For example, add potatoes for satiety, beets for brightness, cabbage for good. Although, in principle, you can put absolutely any ingredients: green salad, roots and herbs of celery and parsley, onions and leeks, tomatoes, peppers, eggplants, green peas, sorrel and spinach. The list is endless. The main thing here is to try and experiment.

Ingredients:
- Asparagus beans - 300 g
- Zucchini - 1 pc. (small size)
- Carrots - 1 pc. (large)
- Onions - 1 pc.
- Garlic - 3-4 cloves
- Hot pepper - 1 pc. or to taste
- Dill - small bunch
- Parsley - small bunch
- Ground paprika - 1 tsp
- Salt - 1 tsp or to taste
- Ground black pepper - 0.5 tsp or to taste
- Refined vegetable oil - for frying
Cooking a vegetable side dish
1. Peel the carrots, wash and grate on a coarse grater.
2. Wash the courgettes and cut into cubes. If you are using old fruits, then peel them and remove seeds.
3. Peel and finely chop the onions and garlic.
4. Heat a frying pan with vegetable oil and send carrots, onions and zucchini to fry.
5. Cook vegetables over medium heat until golden brown.
6. Meanwhile, while the vegetables are roasting, blanch the asparagus beans in lightly salted water for about 20 minutes.
7. After putting the beans in a sieve, let all the liquid drain and cut into 2-3 pieces.
8. Add prepared asparagus to the pan with vegetables and continue cooking under the lid closed for 5-7 minutes. Vegetables will be stewed in their own juice, so do not add any more oils.
9. Greens (dill and parsley), wash, chop and put in the pan.
10. Close the pan with a lid, reduce the temperature and simmer the food for about 5-7 minutes. The ready-made side dish is suitable for fish or meat dishes. For example, fish fillet or meat steak can be laid out on a vegetable pillow - both beautiful and tasty.
