Mashed potatoes are a favorite hearty side dish in many families. Both adults and children adore him. It is a versatile dish that suits the everyday and festive table. There are many variations of its preparation. A variety of products are added to mashed potatoes: milk, sour cream, butter, cream, eggs, potato broth, vegetables, etc. Each housewife has her own proven recipe. Moreover, regardless of the method of preparation, the side dish will still turn out delicious and everyone will be delighted with it.
In this review, I will share a delicious version of mashed potatoes with eggs and butter. To make the mashed potatoes airy, it is important to choose the right potato variety. Give preference to varieties with a high starch content, such as "Adretta" and "Sineglazka". They will make the most delicious puree. In addition, to make the puree airy, you need to use homemade eggs. They will also give a beautiful yellow color.
It should be noted that the delicious puree is only freshly prepared. Therefore, immediately cook the right amount. However, if it is not eaten, it can be disposed of by making zrazy, balls, sticks, used for filling in pies, or kneading dough for cookies, pie or roll.

- Potatoes - 4-5 tubers
- Butter - 50 g

Step by step preparation of mashed potatoes with eggs and butter, recipe with photo:
1. Peel and wash potatoes.
2. Cut it into pieces so that the tubers cook evenly and at the same time, and place them in a cooking pot.
3. Add salt to the saucepan.
4. Pour potatoes with drinking water.
5. And put it on the stove to cook. If desired, you can add spices, dried herbs, peeled onions, garlic, carrots, etc.
6. Cook the vegetable over low heat for 15 minutes, periodically checking the readiness with a fork. If it enters freely, then the potatoes are ready. Then carefully drain the broth into a separate bowl, and hold the pot with potatoes over low heat to evaporate the remaining moisture.
7. Put butter in the potatoes.
8. Mash hot potatoes with a crush. If there is no crush, then grind it through a fine sieve, and then add oil. Pour warm milk instead of butter.
9. Beat the eggs into the potatoes.
10. And stir the puree quickly. If it seems thick to you or if you want to get a thinner consistency, then add the broth drained from the boiled vegetable and bring the puree to the desired consistency.
Arrange the mashed potatoes immediately after cooking on portioned plates and serve. It is combined with any side dish: herring, meat, fish, liver, mushrooms. It is very tasty to eat it with gravy or just a vegetable salad.
