What is heat? Surely many are thinking about this question. This is another interesting option for how to put the filling in a pancake. However, here the filling is not wrapped, but baked into the dough. These pancakes look very original and have an unusual taste. Although they are an old Russian recipe that was unfairly forgotten, thanks to the excellent taste and simplicity of preparation, it has successfully returned to our dining tables.

There are three ways to bake baked pancakes, and each of them is good in its own way.

  • Put the chopped (grated) filling into the dough.
  • Put the filling in the pan and pour over the dough.
  • Pour the dough into the pan, on which quickly, until it crusts, put the filling.

Pancake condiments can be from any product you like. For example, chopped boiled eggs, chopped mushrooms, grated carrots, slices of apples and pears, steamed raisins, prunes and poppy seeds, chopped vegetables, fried onions, chopped sausages, canned corn, greens … You can also cook wheat pancakes, buckwheat or mixed.

1. Place the flour in a container for kneading the dough. It is advisable to sift it through a sieve, then it will be enriched with oxygen and the pancakes will be softer. Although this process is not necessary, but optional.

2. Beat an egg into a bowl of flour.

3. Add a pinch of salt, sugar and refined vegetable oil. I advise you to use refined oil so that the pancakes do not have a specific smell.

4. Pour whey into the container, which can be replaced with any liquid, for example, milk, kefir, baked milk, beer, compote or plain water.

5. Knead the dough well. Its consistency should be fairly fluid. If there is not enough whey, then add it in stages so as not to overdo it, and knead the dough to the required texture.

6. Wash the apple, dry it and remove the core with a special knife, and cut the pulp into thin slices.

7. Now start baking pancakes. Put the pan on the fire and heat it well. Then pour a portion of the dough onto it with a ladle and immediately, until the dough has set a crust, lay out the apple slices. (! Attention) When you pour the dough into the pan, send it to the fire only after putting the apples. I recommend that you prepare the pan before baking the pancakes so that the pancakes do not burn. For this, the frying pan is sprinkled with salt, put on a high heat and warmed up well. After that, the salt is removed, and the pan is wiped with a towel and a little greased with vegetable oil or lard. Next, pancakes are fried.

8. Fry the pancakes on one side for about 2 minutes, then turn them over and fry for the same amount of time. Serve hot pancakes on top of a warm preheated dish. Although it is best to serve the pancakes immediately after baking, i.e. straight from the pan.
