Tart Taten is one of the most popular French desserts. It is an inside out apple pie, in which apples are fried in butter and sugar before baking the pie. It is loved all over the world for its delicious taste and ease of preparation. It goes well with hot drinks and a scoop of vanilla ice cream.
Taten's story is even more fascinating. This culinary creation was born in 1898 at the hotel of the sisters Stefan and Caroline Taten in Lamotte-Bevron. While cooking, Stephanie forgot to make a basket of shortcrust pastry and put the caramelized apples right into the mold. In order not to alter anything, I covered the fruit with dough on top. As a result, the "wrong" cake delighted the hotel guests. The tasty mistake became the hallmark of the Taten sisters' establishment and made their name famous all over the world.
Idea of Tart Taten - favorite fruits are caramelized (pears, peaches, apricots …), which are then baked covered with dough. The upside-down pie is tender and the dough remains crispy enough. it does not bathe in juices. No less important is its versatility, since any sort of apple can be used for the product.

Ingredients:
- Flour - 150 g
- Salt - a pinch
- Eggs - 1 pc.
- Ground cinnamon - 1 tsp
- Butter - 120 g per dough and 50 g for frying apples
- Apples - 2-3 pcs. depending on the size
- Sugar - 50 g
Step by step preparation of Tart Taten with apples, recipe with photo:
1. Cut the butter at a cold temperature (not warm or from the freezer) into medium-sized chunks and place in the bowl of a food processor.
2. Next add a raw egg.
3. Pour in flour, which is sifted through a fine sieve to enrich it with oxygen and make the cake more tender. Then add a pinch of salt.
4. Knead an elastic dough that does not stick to the hands and sides of the dishes.
5. Remove the dough from the food processor, wrap it around with your hands, form into a round ball, cover with a plastic bag and refrigerate for half an hour.
6. In the meantime, prepare the filling. Place the butter and sugar in a skillet and melt.
7. Caramelize sugar over low heat until golden brown.
8. Wash and dry the apples with a paper towel. Remove the core with a special knife, cut into slices, which put in the pan on top of the caramelized sugar.
9. Sprinkle apples with ground cinnamon.
10. Remove the dough from the refrigerator and use a rolling pin to roll it into a thin layer of about 5 mm, which is cut into a round shape to the diameter of the pan. Roll the dough onto a rolling pin and gently transfer and place on top of the apples.
11. Press the dough onto the apples well. Send the Tart Taten with apples to bake in a preheated oven to 180 degrees for half an hour. As soon as the cake is browned, remove it from the oven. Chill a little, because it is very fragile when hot. Then gently remove from the mold and turn over. Sprinkle with icing sugar if desired.
