According to one of the versions, the Stolichny salad was invented in the 30s of the last century by the cook Ivan Ivanov of the Moscow restaurant. In the traditional Soviet version of "Olivier", he added several "his" products and got a new snack. Since that moment, many variations of the preparation of this dish have appeared. In the recipe, chicken was replaced by beef, doctor's sausage, beef tongue, goose, fish, crab meat … Instead of fresh cucumbers, they used salted or pickled cucumbers. Each new culinary experiment acquired unexpected flavors. It should be borne in mind that no matter what recipe you prefer, the following tricks should be taken into account.
- Boil potatoes and carrots in advance. If you cook them in their uniform, then carefully remove the dirt with a brush. Although you can boil vegetables without the skin or bake them in the oven.
- Use homemade mayonnaise for dressing. But a good quality industrial analog is also suitable.
- To preserve the beneficial ingredients in your dish, season the salad just before serving. At the same time, take a portion that you eat in one meal.
- Gastronomic fantasies are endless, so you can add any food to the salad. For example, onions or green onions, boiled beef, smoked chicken, and even red fish. You can also cook it without meat at all.
