Delicious, juicy eggplants with minced meat under a vegetable coat - a magically delicious dish. I cooked it for a family meal, but after trying it, I decided that it could be safely served for a festive meal. I am sure that the guests after taking the sample will remain delighted and satisfied.
Usually we cook eggplant with minced meat in the form of a boat, where the vegetable is cut in half lengthwise, the pulp is cleaned and the meat filling is placed in its place. But in this case, everything will be different. The design of the dish is entirely similar to vegetable ratatouille. That is, eggplant rings alternate in minced meat, everything is poured on top with vegetable dressing and the dish is stewed in the oven.
Before moving on to the recipe, I would like to give a few tips. When buying eggplants, give preference to medium-sized fruits, it is better not to take large ones. The color should be uniform throughout the vegetable. The vegetable should be firm, strong, and free of stains. The middle is removed from overripe eggplants, but we need it for the recipe, so do not take mature vegetables. The peel of the fruit is never cut off.

- Meat - 400 g
- Onions - 2 pcs.
- Garlic - 3 wedges
- Sweet pepper - 1 pc.
- Hot pepper - 0.5 pods
- Ground black pepper - a pinch
- Parsley - a few twigs
- Dill - a few twigs
- Soy sauce - 5-6 tablespoons
- Salt - 1 tsp or to taste
- Vegetable oil - for frying
- Spices and spices to taste
Step-by-step cooking of baked eggplants with minced meat under a vegetable coat:
1. Wash the meat, dry it and pass it through the middle rack of the meat grinder.
2. Peel, wash and twist one onion.
3. Add spices and spices to the minced meat, which you like the most. Also season with salt and ground pepper.
4. Stir the minced meat well.
5. Wash the tomatoes and chop finely.
6. Peel the remaining onion, wash and cut into small pieces.
7. Peel the bell peppers from the seeds with partitions and chop finely.
8. Finely chop the garlic, hot pepper and herbs. Adjust the amount of garlic and hot pepper to your liking. If you like spicy dishes, then double them.
9. Put the pan on the stove, add vegetable oil and fry the onion.
10. After 5 minutes, add bell peppers.
11. After another 5 minutes, add the tomatoes.
12. Stir and add garlic, herbs and hot peppers.
13. Pour in the soy sauce, salt and pepper and simmer for 5 minutes over low heat.
14. Wash the eggplants and cut into rings about 5 mm thick. Usually young eggplants do not taste bitter. But if you are not sure about this, then sprinkle the chopped fruits with salt and leave for 15 minutes. Then rinse and dry with a paper towel.
15. Place some minced meat on each eggplant ring.
16. Place food in a baking dish alternating between eggplant and meat.
17. Pour the vegetable dressing on top of the food and place in the oven for half an hour. Eat ready-made food warm. It is very self-sufficient, so it does not need additional side dishes.
