Many housewives use champignons in cooking, and it is unfair to forget about oyster mushrooms. Although this mushroom is a 100% complete substitute for meat, it is very useful, inexpensive, tasty and has a very beneficial effect on the human body.
We buy oyster mushrooms
In stores and supermarkets, oyster mushrooms are most often sold packaged. Their size varies in diameter from 5–20 cm, and their shape resembles ears. These mushrooms are dark gray in color, young fruits have a brownish tint, and mature ones - purple or ashy. It is worth storing oyster mushrooms in the refrigerator, while they are removed from the store packaging. It is advisable to transfer them to a plastic or glass container, this will preserve their taste.

Ingredients:
- Pork neck - 1 kg
- Oyster mushrooms - 1 kg
- Onions - 1 pc.
- Hard cheese - 200 g
- Mayonnaise - 100 g
- Mustard - 25 g
- Salt - 1 tsp or according to taste
- Ground black pepper - 0.5 tsp or to taste
- Refined vegetable oil - for frying
- Garlic - 3 cloves
Cooking baked meat with oyster mushrooms under a cheese coat
1. Wash the oyster mushrooms under running water, dry with a paper towel and cut into strips or cubes.
2. Put the pan on the stove, pour in vegetable oil, heat it up and send the mushrooms to fry.
3. Peel the onions, wash and chop into half rings.
4. Then send the onion to the pan with the mushrooms and fry the food for 7-10 minutes. During frying, it is very important not to overexpose the mushrooms on fire, otherwise their taste will deteriorate. To avoid this, try oyster mushrooms during cooking, they are not poisonous, so there is nothing to fear.
5. In the meantime, wash the pork, dry it and cut into slices about 1-1.5 cm thick. If you cannot eat fatty meat, then the neck can be replaced with a lean piece.
6. Use a kitchen hammer to beat off the meat on both sides.
7. Line a baking tray with parchment paper and place the pieces of meat on top.
8. Brush each slice of pork with mustard and add finely chopped garlic.
9. Season the meat with salt and pepper to taste.
10. Then place the fried oyster mushrooms with onions on each piece of meat. Do not put too much, otherwise the mushroom filling will fall out during the meal.
11. Pour mayonnaise on the mushrooms, which can be replaced with sour cream, or not at all, if you are not a supporter of fatty foods.
12. Grate the cheese on a coarse grater and sprinkle each piece of meat with it. Heat the oven to 200 degrees and only then put the meat in it for 40–45 minutes. Do not overdo the meat, otherwise it will dry out and become dry.
Serve hot right after cooking. For a side dish, you can make mashed potatoes, or simply chop a vegetable salad.
