What do we most often eat for breakfast? Sandwiches and scrambled eggs, of course. But they are already tired of the order, so you have to look for an alternative to them. A hearty dish of Russian cuisine - pancakes - is a great quick substitute. This is a delicious culinary product baked from batter. They are cooked not only sweet, but also savory. Sweet brown cakes are baked instantly, and the dough is also easy to make.
Many housewives prepare pancakes on kefir with soda, which gives them airiness. Of course, the soda dough rises well. However, this is not the only option for adding pomp to the cakes. I suggest trying to make pancakes with yeast and kefir. Although they cook longer than yeast-free ones, the aroma and delicate taste will conquer everyone from the first bite and will not leave anyone indifferent. I bake them on Sundays, when you can take your time and wait until the household is in bed. Although they can be cooked in the morning. After quickly kneading the dough, leave it to come up, do your morning baths yourself, and then quickly bake pancakes.
Such pancakes are served with a variety of sauces, sour cream, jam and even red caviar. But I prefer most of all to use honey or jam as an addition.

Ingredients:
- Flour - 1 tbsp.
- Kefir - 1 tbsp.
- Dry yeast - 1 tsp
- Eggs - 1 pc.
- Salt - a pinch
- Sugar - 3 tablespoons
- Refined vegetable oil - 3 tablespoons
Step-by-step preparation of pancakes with kefir and yeast:
1. Pour kefir into a container for kneading the dough at a temperature of about 37 degrees. If it is cooler or warmer, the tremors will not start working properly and the dough will not rise.
2. Then add sugar and dry yeast. Stir to dissolve the yeast completely.
3. Sift half of the flour through a fine sieve so that it is enriched with oxygen, so the pancakes will become more tender.
4. Knead the dough well to break all the lumps.
5. Leave it to rest for 15 minutes in a warm place. Wait until small holes appear on the surface. This indicates that the yeast has begun to play.
6. Add remaining flour and season the dough with a pinch of salt.
7. Next, beat in an egg.
8. Knead the dough with a whisk and pour in the vegetable oil.
9. Knead the dough again until smooth, cover it with a towel and leave in a warm place for 15-20 minutes.
10. After this time, the dough will almost double in volume.
11. Place the pan on the stove and heat well. Since oil is poured into the dough, the bottom of the pan does not need to be oiled. Spoon the dough with a tablespoon and pour it into the pan. Fry the pancakes over medium heat until holes appear on top and acquire a golden color.
12. Flip the pancakes over and cook for the same amount of time until golden brown. Serve them for tea immediately after cooking with your favorite jams.
