Today I propose a recipe for an interesting meringue cake with egg yolk and cherry cream. The airiness of this cake and its white color just make you appetite. It has an unusual delicate taste with a pleasant crunch. And its important feature is the speed and simplicity of preparation. It is also completely not greasy, and each housewife can regulate the sweetness of the product independently. It is prepared without a drop of flour, which makes it low in calories.
This cake recipe assumes one layer of the cake, which is greased with the most delicate cream. But if you wish, you can make a tall cake in this way by making several meringue cakes. Instead of cherries, you can put seasonal berries. In addition, you can use not egg yolks for the cream, but make a layer of curd mass. However, as you can see, taking this recipe as a basis, then you can experiment with it and always get new delicious confectionery delights.
One drawback of this product is that it is quickly eaten. The cake is so airy, light and delicate that even one person can master it. Therefore, cook a double portion at once.

Step-by-step preparation of a meringue cake without flour:
1. Carefully break the eggs and separate the whites from the yolks. Make sure that not a single drop of yolk gets into the whites. Also, the dishes should be perfectly clean, without a drop of fat and water. All this will negatively affect the quality of the meringue. The proteins will not be whipped to the desired consistency.
2. Take a mixer and at a slow speed, begin to beat the egg whites. When a white liquid foam appears, start adding powdered sugar in a teaspoon.
3. Continue whisking the whites, increasing the speed to maximum. Bring them to firm peaks and a white, lush and stationary mass. You can check the readiness as follows: turn the bowl over, the squirrels should remain motionless.
4. Take a convenient baking sheet or baking sheet and line it with pagament. Lay out the squirrels so that there is a 1-1.5 cm side at the edges.
5. Preheat the oven to 70 degrees and put the cake to dry with the door slightly ajar to release steam. When the crust is dry and rough, remove it from the oven and leave to cool completely. The cooking time in the oven depends on the height of the cake. It can take 1-1.5 hours.
6. When the meringue is completely cooled, start preparing the cream. Pour 1 tablespoon to the yolks. icing sugar and beat with a mixer at high speed.
7. Add the starch so that the mixture can acquire a creamy texture.
8. Add the pitted cherries to the mixture and stir. Berries can be fresh, frozen, or canned. Blot the latter well with a paper towel.
9. Place the yolks in a water bath and heat until the first bubbles appear. Do not overdo them on fire, otherwise they will curl up.
10. Fill the protein base with the cream and sprinkle with cocoa powder, coconut or almond, if desired. Leave the cake to soak for 1-2 hours and you can start tasting.
