If you have an unused jar of winter stocks of fruit puree, use it to make delicious delicate pancakes. Fruit puree does not need to be preserved. Baby puree, which is available in the dairy kitchen or sold in stores, is suitable. You can also make freshly mashed potatoes. As a fruit, it doesn't matter what you use. Applesauce, pear, pumpkin, plum, apricot, or fruit mix will work.
The proposed recipe for fritters differs in a few more tricks. Firstly, liquid components like kefir, yogurt, sour milk or fermented baked milk are completely replaced by fruit puree with eggs. Secondly, vegetable oil is added to the dough, which allows frying pancakes in a pan with minimal or no oil. This makes the dish lower in calories. Thirdly, for the flavor of the dish, cinnamon is added to the dough. This combination of ingredients is a win-win: it is tasty, beautiful, and easy to prepare. - Fruit puree - 150 g
- Ground cinnamon - 1 tsp
- Vegetable oil - 2-3 tablespoons
- Salt - a pinch
- Sugar - 2-3 tablespoons or to taste
- Wheat flour - 15-200 g
- Eggs - 1 pc.
Step by step preparation of pancakes with fruit puree, recipe with photo:
1. Pour raw eggs into a mixing bowl.
2. Add a pinch of salt to the eggs with sugar and beat the food with a mixer until an airy white foam is formed.
3. Pour the vegetable oil into the egg foam and stir the food again with a whisk until smooth.
4. Add the fruit puree with ground cinnamon to the dough and stir the food.
5. Add flour, sifted through a fine sieve, to the dough so that it is enriched with oxygen and the pancakes are softer.
6. Knead the dough well so that there are no lumps. It is advisable to do this with a blender or mixer.
7. Before baking the first pancake, lightly coat the bottom of the pan with butter. You don't have to do this in the future. Heat the skillet well with oil. Take a portion of the dough with a tablespoon and pour into the pan, forming oval or round cakes.
8. Saute the pancakes with fruit puree on each side over medium heat for 2 minutes until golden brown. Remove them from the pan and serve hot with sour cream, cream, honey, jam, or just a cup of fresh tea or coffee.
