I propose a recipe for a juicy, spicy and very tasty salad with zucchini. In fact, there are not so many salads with this wonderful vegetable. In addition, zucchini is usually pickled for them, but today I propose to fry them, which will add an unusual touch to the dish. The prepared salad with fried zucchini, tomatoes and cucumbers turns out to be very bright, satisfying and aromatic. The pungency and amount of greens in the dish can be adjusted according to your taste and preferences. Vegetables and herbs should be the freshest and tastiest. In addition to the selected products, along with zucchini, you can add almost all the vegetables that are in the refrigerator to the salad. Step by step preparation of salad with fried zucchini, tomatoes and cucumbers, recipe with photo:
1. Wash the zucchini, dry with a paper towel and cut into bars or any other shape. If the fruits are ripe, they contain large seeds that should be removed. Therefore, it is better to use small dairy vegetables for salad.
2. Pour vegetable oil into the pan and add the zucchini. Season them with salt and sauté over medium heat, stirring occasionally, until tender and golden brown.
3. While the zucchini is roasting, wash all the vegetables and pat dry with a paper towel. Then cut the tomatoes into medium-sized slices.
4. Cut the cucumbers into thin half rings of 3-5 mm.
5. Chop the greens and remove the seeds from the hot pepper. they are the most bitter and chop finely. Place all chopped fresh vegetables and herbs in a deep salad bowl.
6. Add fried zucchini to them.
7. Season salad with fried zucchini, tomatoes and cucumbers with salt and olive oil, stir and serve. It should be served immediately after cooking, because tomatoes, under the influence of salt, will let the juice out and the dish will turn out to be very watery.
