So it was with me, until I first baked a yeast pie with apples. It is his recipe that I want to share with you. As practice has shown, such yeast dough can be used to make brass pies, meat, fish or sweet pies and even Easter cakes! In short, master this recipe! Ingredients:
- Wheat flour - 500 g
- Milk - 150 ml
- Fresh yeast - 40 g
- Vegetable oil - 100 ml
- Chicken eggs - 4 pcs.
- Sugar - 8 tbsp. l.
- Vanilla sugar - 10 g
- Ground cinnamon - 0.5 tsp
- Salt - a pinch
- Apples - 500 g

To make an airy yeast dough, let's start with a dough. To do this, mix 100 g of flour, which we sift through a sieve, 1 tbsp. l. sugars and yeast; they need to be crumbled into crumbs. Yeast dough can of course be made with dry yeast, but believe my experience and several tests, the best cakes are obtained when you use fresh live yeast.
Heat the milk a little so that it is not hot under any circumstances, otherwise the yeast simply will not work and the dough will not rise. Pour milk into the ingredients for the dough and mix thoroughly. We cover the container and leave it to come up in a warm place (you can near the stove).
After 30–40 minutes, the dough for the yeast cake rises and increases in volume by 3 times.
Beat eggs separately in a bowl, 1 tbsp. l. leave the beaten eggs in order to grease the cake afterwards. Add 3 tbsp to the remaining eggs. l. sugar, a pinch of salt and vanillin, pour in vegetable oil and whisk the ingredients until smooth.
Pour the liquid part into the matched dough and gradually add the sifted flour, kneading the dough. The dough can take as much flour as it says in the recipe, but there may be slight deviations in its quantity, depending on the quality.
Put the dough on a flat, floured surface and knead thoroughly with your hands until it stops sticking. Then we put it in a clean bowl and cover it with a clean cotton towel, let it stand warm and come up. This will take about an hour. After the dough comes up for the first time, knead it and leave again for 30 minutes.
In the meantime, let's prepare the filling for the yeast cake. Wash the apples, peel them, remove the cores and chop them: you can grate on a coarse grater, cut into thin strips or cubes. I decided not to be smart and rubbed the apples - quickly and easily. Combine grated fruit with 4 tbsp. l. sugar and cinnamon, stir. The filling is ready.
Divide the dough into 6–8 parts, each of which we use our fingers to shape into a cake. Place the apple filling on the center of the tortillas and pinch the edges, making them look like bags.
Grease the baking dish with vegetable oil and put the filled dough into it, forming a flower. Let the cake stand for about 15 minutes and rise, and then grease it with a beaten egg set aside for later.
In an oven preheated to 180 degrees, bake the cake for 30-40 minutes. Checking for readiness with a wooden skewer is mandatory. Give the finished cake time to cool and serve.
